A salad is generally considered a side dish but people fast becoming more health conscious, salads are quickly becoming meals in their own right. A Mediterranean salad combines the goodness of all the major food groups along with amazing flavours to create a wholesome, healthy snack or meal.
Ingredients: Quantity
Cherry tomatoes — diced 2 cups
Yellow bell pepper — diced 1
Red onions — sliced 1 cup
Olives — sliced ½ cup
Cucumber medium-sized — diced 1
Feta /Paneer— crumbled 3 tablespoons
Olive oil 3 tablespoon
Garlic — minced 1 teaspoon
Lemon juice 1 tbsp
Salt to taste
Freshly ground black pepper to taste
Fresh Coriander — chopped 1 tablespoon
Method:
- Take a large bowl.
- Add the cherry tomatoes, yellow bell pepper, red onions, olives, cucumber and feta or paneer.
- In a small bowl, whisk together the olive oil, garlic, lemon juice, salt, and pepper.
- Pour the olive oil dressing over the salad mixture and toss.
- Garnish with fresh coriander.
- Serve immediately.
