Phirni is a popular milk and rice based sweet, generally eaten chilled. When combined with fresh warm malpuas, the combination is a celebration of flavours in your mouth. The warm crispiness of the malpuas creates a pleasant contrast with the coolness and creaminess of the phirni. We bring to you, today, a sugar-free version of the phirni to pamper those healthy taste buds.
Ingredients
Skimmed milk 5 cups
Rice, soaked in hot water for 30 minutes 1/3 cup (60 gm)
Green Cardamom (crushed) 6 (no skins)
Kaloree1 tablets (crushed) to taste
Pistachios, blanched and ground to a paste 2 Tbsp (40 gm)
Green color- to taste
Rose essence 1/4 tsp
Almonds, blanched and sliced into slivers 10
Vark (silver leaf) (optional) to garnish
How to Make Two-In-One Phirni (Sugar Free)
- Drain the rice, place it in a blender, add a little bit of the milk and blend till it is a fine paste.
- In a heavy- bottomed saucepan, bring the milk to a boil.
- Add the ground rice to the milk and bring the milk-rice mixture to boil again.
- Lower the heat and simmer, stirring all the time, till the whole thing becomes one well blended mass. (It may take about 20-25 minutes. To test, you can drop a spoonful, let it cool and check to see if it sets).
- Turn off the heat.
- Add the cardamom
- Allow to cool to room temperature and add the Kaloree1 to taste.
- Divide the phirni into two halves.
- Add the pista paste to one portion and add the green colour to the pista half.
- Add the rose essence to the other half.
- Pour the white phirni into the serving bowl and refrigerate to set (you can keep the dish in the freezer compartment for a short while to speed up the setting of it), leaving the other half at room temperature.
- When the white portion is set, pour the green portion over it, cover with the vark, garnish with the almonds and refrigerate it to set.
- Serve chilled with fresh warm malpuas.
